The Cooking Space

How much room a ship gave to cooking reveals her whole order of life. From a sand-box firebox on a sloop’s deck to the brick firehearth of an East Indiaman feeding three hundred, the cooking space grew with the crew — one cook, a mate or two, and never an inch to spare.
Every wooden ship carried an open fire in her belly — the most dangerous convenience aboard. The cooking space was where that fire lived: a few square feet of sand and brick where one cook fed a dozen men on a sloop, or a great iron firehearth where a staff of mates and boys boiled salt meat for hundreds. Walk the space at true scale, from the smallest trading sloop to an Indiaman, and watch the kitchen grow with the muster book.

Engineering

Keeping an open fire inside a wooden hull was an engineering problem before it was a culinary one. The hearth sat on a bed of sand, brick, or stone; iron plates backed the fire; and smoke escaped through a deck funnel — the “charley noble.” The space was placed forward, clear of the magazine, near a hatch for wood, and low enough to keep weight off the upper works.

Every foot it occupied was a foot taken from guns, cargo, or hammocks, which is why even a great ship kept her kitchen astonishingly small.

Historical Overview

In the early seventeenth century, small vessels cooked over portable fireboxes set on a bed of sand, often on the open deck in fair weather. As ships grew, the fire moved below into an enclosed cookroom in or under the forecastle, set on brick or stone against the ever-present terror of fire at sea. By the Golden Age of piracy, larger merchantmen and warships carried purpose-built firehearths with iron furniture and a copper kettle sized to the crew.

Pirates built none of this themselves — they inherited whatever cooking space their prize already carried, which is why a pirate company’s table depended so much on what ship it had taken.

Why It Existed

Hot food was not a luxury; it was the engine of the ship. Salt beef and pork were inedible without hours of boiling, dried peas and oatmeal needed the kettle, and a warm meal was the one reliable comfort in a cold, wet working day. A ship that could not cook was a ship on raw biscuit and short tempers. The cooking space existed because morale, health, and discipline all simmered in the same copper.

Daily Use

The cook’s day began before dawn, coaxing the fire alight and starting the breakfast burgoo. The main meal came at midday: rations of salt meat, tallied by mess, boiled together in the great kettle while pease or oatmeal cooked alongside. The fire was doused at nightfall, in heavy weather, and always before action — no open flame could live on a fighting deck.

The skimmed fat, the “slush,” was by custom the cook’s perquisite to sell ashore: the origin of the phrase “slush fund.”
Crew / Personnel
Custom allowed one cook to a ship, and in the Royal Navy the post was traditionally given to a maimed or elderly seaman who could no longer go aloft — a pension with a kettle. Large ships added cook’s mates and boys to haul wood, tend the coppers, and serve the messes; a first-rate feeding eight hundred men ran its firehearth like a small works.

On pirate vessels the cook was a valued hand, and a prize with a good cooking space — or a good cook — was worth keeping.
Construction
On the smallest craft the “construction” was a box of sand and a grate. The proper shipboard hearth was laid as a brick bed with a brick or iron back, framed clear of the timbers, with its copper set above the firebox and a funnel carried through the deck. Builders placed it against a bulkhead in or beneath the forecastle, with wood stowage close by and the powder as far away as the ship allowed.
Variations
The space varied first with size, then with trade. Slavers and East Indiamen carried oversized coppers to feed great numbers between ports. Northern ships enclosed their cookrooms early against the weather; smaller Caribbean traders kept deck fireboxes far longer. And one confusion outlived them all: the same English word names the oared warship and the ship’s kitchen — this exhibit once described the former, and now, properly, describes the latter.

Archaeological Finds
Cooking spaces are archaeological treasure: brick, iron, and copper survive where wood and canvas rot. The Mary Rose excavation recovered her brick ovens and cauldrons nearly intact. The Queen Anne’s Revenge site produced kettle and cooking-ware fragments. At Port Royal, the sunken city’s kitchen layers preserve the shoreside end of the same foodways.

When divers find brick on a wreck site, they have usually found the kitchen.

Sloop (10–75 Men)
No dedicated galley. A portable firebox on a bed of sand — on deck in fair weather, under the forecastle in foul. Cooking rotated among the hands or fell to one man; cold rations whenever the sea got up.
Brigantine (50–120 Men)
A small enclosed cookroom wedged into the forecastle, worked by a single cook. One hot meal a day was the standard, and the fire went out with the weather.
Frigate-class (150–250 Men)
A proper galley on brick footing beneath the forecastle: a cook — by navy custom often a maimed seaman — plus a mate. The great copper boiled the whole ship’s salt meat at one fire.
Indiaman And Ship Of The Line (300–850 Men)
The largest cooking space afloat: an iron firehearth with ovens and coppers, run by a cook with mates and boys, plus separate cooking for the cabin table. Even so, it stayed smaller than a modest kitchen ashore.

  • One English word names both the oared warship and the ship’s kitchen — two “galleys” with nothing else in common.
